Thai Curried Meatballs

I bet you did not know you could do this with meatballs

Ingredients: 
  • 1-14oz can coconut milk
  • 1-tbsp Thai green, or mild red curry paste
  • 2-carrots, sliced
  • 1-onion, sliced lengthwise
  • 1/2-tsp salt 2-cups chopped broccoli
  • 1-can baby corn, drained and rinsed
  • 2-tbsp chopped fresh cilantro (can use fresh basil)

 

 

Directions: 

In a shallow saucepan, bring coconut milk, curry past, and 1/2-cup of water to a boil, whisking often Add carrots, onion, and salt Reduce heat and simmer for 10 minutes Add meatballs and simmer for 5 minutes Add broccoli and corn; simmer 5 minutes or until tender crisp Add basil and lime juice; simmer 30 seconds Serve over rice
